Just What I Needed



After a busy day at work that did not end when I left the office, the last thing I wanted to do last night was cook dinner. But I was starving and I had all of the ingredients for this yummy sounding pasta, so I figured I'd steamroll through it with a little help from my mom. Well, steamrolling wasn't necessary and the only thing my mom had to do was boil the water. This was, hands down, the easiest pasta dish I've ever made, and less than 30 minutes after I got home, I was holding a warm, comforting bowl full of yumminess while I worked away at my desk.

P.S. If you're lucky enough to live in Charlottesville, I highly recommend getting the prosciutto for this dish at Feast. It is, without a doubt, the best darn prosciutto I've ever had.

I make a very similar pasta with chopped & seasoned ribeye steak. It's the best comfort food on these cold wintery days. I have probably had it 3-4 times a week for the past few weeks :0)
